The answer to your Blueberry Muffin prayers… Blueberry Snack Bites!


They’re in season, they’re fresh and popping off their little branches. Last week I went with my friend Elise to pick some and thought I NEED to make something delicious with these little round sweet blue balls. (I know how that might sound…).


I’m a big fan of snacks, so it only seemed right to turn them into something snack-y. Here is the recipe!


Blueberry Snack Bites
1 c blueberries – fresh
1 c whole grains oats
2 tbsp peanut butter
1 tbsp chia seeds
Honey to taste
1/2 c unsweetened coconut, toasted
1. In a food processor combine blueberries, oats and peanut butter. Pulse until well combined.
2. Fold in coconut, you may need more or less depending on how much you need to bind your mixture. This will vary due to the water content of the blueberries.
3. Roll in toasted coconut, chopped nuts or cacao nibs to give it even more flavour and texture!
